This dish starts with the comforting base of our traditional Khoresh Gheymeh: tender diced lamb and creamy yellow split peas slow-cooked in Chef Javad’s special Persian tomato sauce, infused with the unique tang of dried limes (Limoo Omani).

What elevates this version (bademjan means aubergine) is the addition of silky, melt-in-your-mouth slices of fried aubergine (eggplant). These are gently simmered in the stew towards the end, absorbing the rich flavours while adding their own delicate taste and velvety texture.

Often still garnished with crispy chips (fries) for a delightful textural contrast, this decadent lamb and aubergine stew is served alongside fluffy saffron rice. It’s a truly satisfying and flavourful Persian comfort food experience.
